So let’s face it – Beer is a necessary and expected component of any Super Bowl gathering, big or small. I don’t care if you hate beer and never drink the stuff; 90% of people out there will have at least a few sips of beer during the biggest sporting event spectacle of the year. The big problem when hosting a party lies in the fact that a lot of people just don’t care for beer, but they also don’t want to be singled out for drinking something different from everyone else during the game. As a host/hostess, what do you do to satisfy everyone’s adult beverage needs? Well, how would you feel if I told you that I have a recipe for a delicious beer cocktail that even the staunchest beer-hater would love? The Raspberry Beer Punch is that very cocktail. It is incredibly easy to make, creates a large batch, and is universally loved by beer connoisseurs and haters alike (regardless of gender).
My mom actually sent me this recipe a long time ago and my first reaction upon reading the ingredients was, “Yuck!” Personally, the thought of a cocktail made with beer just isn’t appetizing. Over the years, as I have become more and more willing to try new food and drinks, I finally gave it a whirl. Holy Cow, that mama Jama was freakin’ delicious!! Originally featured in Southern Living Magazine about 5 or 6 years ago, I must admit that I am very disappointed it took me so long to test out the recipe.
I firmly believe that your Super Bowl party/backyard picnic/family gathering needs Raspberry Beer Punch. Trust me and try it out this weekend!
Raspberry Beer Punch
Makes 6-8 servings
Recipe slightly adapted from Southern Living Magazine, April 2010
Ingredients:
- (1) 12 ounce container of raspberry lemonade concentrate, thawed
- 1 cup vodka
- (3 ½) 12 ounce cans or bottles of pilsner or other light tasting beer (I used Coors Light), chilled
- 1 cup fresh raspberries (You can substitute frozen if fresh are not available. Just make sure they are thawed before using.)
- 1 lemon, sliced
Directions:
- Pour the thawed raspberry lemonade concentrate and the vodka into a large pitcher or punch bowl and stir.
- Gently pour in the beer so that it doesn’t foam up too much. Lightly stir to incorporate all of the liquid ingredients.
- Place the raspberries and lemon slices in the pitcher. Serve in glasses filled with ice.
Side Note: If your beer is not chilled in advance, you can add a few ice cubes to the pitcher. Use them sparingly though because you don’t want to water down the punch.
