Mt. Diablo Bean Dip (AKA Nine Layer Dip) – Printable Recipe

Ingredients

  • 1 cup sour cream
  • ½ of a 1.25 ounce package prepared taco seasoning (such as McCormick or Lawry’s)
  • 1 can vegetarian refried beans (16 ounces)
  • ½ lime, juiced
  • 2 ripe avocados, diced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey jack cheese
  • 1 cup diced tomato (I usually use 1 or 2 tomatoes on the vine depending on their size)
  • 1 can chopped olives (4.25 ounces)
  • 4 green onions, white and light green parts finely chopped (discard the dark green part)
  • 2 ounces (½ of a small can) of diced jalapenos or mild green chilies, if you are sensitive to heat
  • For Serving: 1 bag of tortilla chips

Instructions

  1. Place the sour cream and taco seasoning in a medium size bowl and mix together well. Cover and place in the fridge for approximately 30 minutes prior to assembling the remainder of the dish
  2. On a large platter, spread out the refried beans so that they form an even layer.
  3. Pour the lime juice over the diced avocados and gently mix together. (The lime juice will keep your avocados from browning.) Spread the avocado in an even layer on top of the beans.
  4. Retrieve the sour cream and taco seasoning mixture from the fridge and evenly spread it over the avocado layer.
  5. Take the remaining ingredients, except the tortilla chips, and layer them on top of the sour cream in the order they appear on the ingredient list.
  6. Serve with a big bowl of tortilla chips for dipping.
