Hydrating Watermelon Coconut Water – Printable Recipe
Ingredients
- 1 personal size seedless watermelon (less than 6 pounds), rind removed and cut into 2 inch pieces
- 1 handful of fresh mint
- Juice from one lemon
- 1 or 2 tablespoons of honey or agave syrup (depending on your taste)
- 1 or 2 cups of plain coconut water (depending on your taste)
Garnish: sprig of mint
Special Equipment: Blender, food processor, fine mesh sieve
Instructions
- Place the watermelon and mint into your blender or food processor and puree until all chunks are completely broken down. You may need to do this in batches.
- Place your fine mesh sieve over a medium size mixing bowl. Working in batches, carefully pour about one third of the puree into the sieve and set the rest aside. Using a spoon, press against the solids in the sieve so that you extract as much of the juice as possible into the mixing bowl. Once you are no longer getting juice from the puree, scoop out the spent solids and discard. Repeat with the remaining puree.
- Pour the lemon juice in your serving pitcher and add the honey/agave syrup. Whisk well until the honey is dissolved. Add the watermelon juice and one cup of coconut water. Stir well and taste. Add more honey/agave or coconut water depending on your taste preference. Serve in glasses over crushed ice and garnish with sprig of mint.
It wouldn't be Mixed and Mashed if we failed to provide of a way of making this more of an adult beverage, so feel free to add 1.5 ounces of vodka when serving!
